Ingredients
8oz extra firm tofu
1 rib celery, finely diced
1/4 yellow onion, finely diced
1 tablespoon parsley, finely diced
1/3 cup vegan mayonnaise
1 tablespoon mustard
1 tablespoon diced green chilies (canned)
2 teaspoons nutritional yeast
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon tumeric
1 pinch cayenne pepper
Directions
Drain and press the tofu.
Prep the veggies: celery, onion, and parsley. Mix all ingredients, except for the tofu.
Dice the tofu info small pieces, mash with a fork. Mix the tofu into the rest of the ingredients.
Makes enough to fill one Toby's 14 oz container.
